Ingredients

1 head cabbage
6 medium onions
6 green onions
6 carrots
2 bell peppers
3 large tomatoes
5 stalks celery
4 oz uncooked brown rice
Salt and pepper, to taste

Instructions

1. Cut the vegetables into small pieces.
2. In a large pot, put all the vegetables and enough cold water to cover. Bring the water to boil. Lower the heat and then simmer uncovered for about 10 minutes.
3. Cover and simmer on low heat until the vegetables are soft for about 15 minutes.
4. Meanwhile, cook the rice. Combine the rice when the soup is cooked. Season to taste with salt and pepper.
